Chickpea Burger with Honey Curry Mayonnaise
Ingredients

2 | cans (540 mL) CO-OP GOLD Chickpeas | |
1 | cup minced red onion | |
2 | tbsp chopped cilantro | |
2 | tsp minced garlic | |
2 | eggs | |
½ | cup panko breadcrumbs | |
3 | tbsp CO-OP CENTSIBLES All Purpose Flour | |
1½ | tsp ground cumin | |
1½ | tsp salt | |
oil for the pan | ||
Sauce and garnish | ||
½ | cup Mayonnaise | |
1½ | tsp Curry Powder | |
1½ | tsp CO-OP GOLD Honey, warmed until liquid | |
6 | burger buns | |
1 | cup CO-OP GOLD Bread and Butter Pickles | |
12 | lettuce leaves |
Directions
Prep time: 20 minutes
Total time: 40 minutes

- Open chickpea cans, drain the liquid and rinse the chickpeas in cold water. Drain any excess water. Place the chickpeas and onion in a food processer and pulse until the chickpeas are mashed into rice-size pieces.
- Transfer chickpea mixture to a large bowl and add cilantro, garlic, eggs, breadcrumbs, flour, cumin and salt. Use your hand or wooden spoon to mix well.
- Separate mixture into six balls and form them into patty shapes. Place patties on a parchment-lined tray, cover and chill until ready to use.
- Mix mayonnaise, curry powder and honey in a bowl, mix and chill until needed.
- Preheat a flat top or frying pan to medium heat. Add a little oil to the pan or flat top, then cook patties, flipping once, until both sides are golden brown and warm inside.
- To assemble burgers, place mayo sauce on both sides of the bun. Add pickles to the bottoms and lettuce to the tops. Add chickpea patty to each bun and enjoy.
If you wish, instead of sautéing, bake the patties at 400°F for 12 minutes.
